Diamond Cay is home to Foxy Callwood’s second restaurant on Jost Van Dyke – Foxy’s Taboo. The restaurant, a small boutique run by Foxy’s wife, and the sailing dock are currently the only developments in the area, but there are plans afoot to develop a marina here. Diamond Cay is actually a national park, and there are some interesting hikes from here. One of the highlights is a hike to the Champagne / Bubbling Pools – you can follow your nose there from Foxy’s Taboo. Ask at the restaurant and they’ll point you in the right direction. It takes a few minutes to hike to the pools, where, if the tides up, natural rock pools are filled with bubbling water each time the tide rushes in. Remember to take some cold drinks with you, and something other than flip-flops to walk in.
